It’s been several months since I got my awesome Instant Pot and I thought I’d share the best Instant Pot recipes that I’ve tried so far and some more that look delicious!

What’s an Instant Pot? It’s an electric pressure cooker, slow cooker, steamer, and so much more! I was nervous to use it at first, so I started using it just once a week, then worked up to using it EVERY. SINGLE. DAY. I’m not even kidding — it’s THAT easy to use (and clean)!

Since I like to keep things super easy, simple, and as healthy as possible in the midst of my crazy, busy life — most of the recipes I make are just that — easy, simple, & healthy! Nothing fancy and nothing that takes much preparation.

I am SO happy that I took the plunge and ordered myself an Instant Pot. It replaced my old crockpot and egg steamer!

4 Of The Best Instant Pot Recipes That I’ve Tried &  Loved

Hard-Steamed Eggs — if you need hard boiled eggs for potato salad, egg salad, or just want to make big batches for quick & easy breakfasts like I do, then you’ll love how easy it is to make them in the IP. You can Google it and find several variations of this “recipe”, but I’ll tell you how I do it.

  • I put about 1 cup of water in the bottom of my IP cooking pot and place the steam rack in the bottom (it came with my IP).
  • Then I use a steam basket and fill it up with eggs (I have made up to 12 eggs at once in mine by stacking them a little) and place on rack.
  • Then I follow the IP instructions to close and seal lid.
  • I turn it on to “steam” and put it going for 6 minutes (this makes a very well-done egg, you might have to adjust it to make them the way you like).
  • Then I do a quick release (according to IP instructions) and remove eggs as soon as it is safe to do so. I sometimes let them cool on the counter or I put them under cold water, depending on how quickly I need to peel them. They peel easily, too!

Pinto Beans — Every single weekend, I make a batch of pinto beans for us to eat throughout the next week for our Mexican dishes. It has become so much easier since I got the IP!

  • I put 3-4 cups of dried pinto beans soaking in water for a few hours or overnight (add a teaspoon of raw ACV to the soaking water to eliminate some of the “side effects” from eating beans).
  • Then I drain and put the beans into the IP cooking pot. I cover with water (I go about 1/2 inch above beans).
  • Then I follow the IP instructions to close and seal lid.
  • I turn it on to “manual” and put going for 45 minutes. I do not usually do the quick release when they are done, but let them release the pressure on their own. Then I open when it is safe to do so.
  • Drain out the liquids and place in an airtight bowl to store in the fridge and use all week or I use some of the liquid to mash the beans into a “refried” beans mixture.

Beef Roast — You can find several variations of Beef Roast recipes, but I bet mine is the easiest because you don’t have to cut up the roast!

  • 2-3 pound beef roast, thawed
  • olive oil, as needed
  • Lawry’s seasoning salt, to taste
  • 1-2 onions sliced
  • baby carrots, as needed (I use a couple handfuls)
  • baby Yukon potatoes, fork poked, as needed (I do about 10)

Put the olive oil on the bottom of the IP cooking pot. Put the roast in, then flip it to coat both sides with oil. Sprinkle seasoning salt all over roast to taste. Add onions. Close & seal lid according to IP instructions. Put on “manual” for 30 minutes. Prepare carrots & potatoes. When the IP timer beeps done, do a quick release according to IP instructions. Open lid once it is safe to do so, add carrots & potatoes. Close & seal lid again. Put on “manual” for 12 minutes. When done, do the quick release. Open lid when it is safe to do so and remove the delicious food to serve!

Chicken — I put a small amount of olive oil, several boneless skinless chicken thigh pieces (or a few breasts), and seasonings or BBQ sauce. Pressure cook on “manual” for about 10 minutes. Done! Add white rice cooked in chicken broth for a super easy meal!

Taco Pie — I have made a burrito pie/casserole in the oven several times that my entire family loves! It is very similar to this recipe but uses more refried beans and I leave the cheese out to make it dairy-free and then the dairy-eaters can add cheese and plain Greek yogurt to their own servings. I definitely want to try it in my IP! I just need to buy this pan to make it work!

Meatloaf — Meatloaf is made almost weekly at our house. This recipe sounds delicious and easy enough even for me!

French Dip Sandwiches — I LOVE French Dips! To make a really great French Dip with the best Au Jus for dipping, you need to let it brew in the slow cooker all day long … or do you?! This recipe has all of the right ingredients and will take just a couple of hours! But, I’ll be honest … I will most likely skip the individual prepping steps and just add everything to the IP to make this one of the easiest French Dip recipes ever! Yum!

Rice Pudding — I haven’t had rice pudding since I was a child, but think it is delicious! I just might try this recipe using coconut oil and canned coconut milk (full fat) in place of the dairy so that my oldest can enjoy it with us.

    1. I do occasionally add a splash of chicken broth, white cooking wine or Italian style dressing. I never measure it and I doubt it’s 1 cup. I’ve not had any issues but maybe I’ve just lucked out so far?!
