Here is my version of a Mango Salsa. I added this to chicken and cheese quesadillas one night and then in beef & black bean soft tacos another night, both ways were delicious!
Mango Salsa
3 large tomatoes, diced (I used yellow/dark purple heirloom and a regular red)
1 mango, peeled, seeded, and diced
1 avocado, peeled, pitted, and diced
1/2 yellow onion, diced
1 jalepeno, seeded and minced (use gloves when cutting.. or a ziploc freezer bag over your hand like me, lol)
1 lime, juiced
1/2 a bunch of cilantro, minced
salt to taste
1. Combine all ingredients in bowl. Put in fridge for at least 30 minutes to let flavors blend before using. Enjoy!
